Fun Recipe: Baked Eggs with Swiss Chard and Baby Kale

This week, my mother and I have been walking after work because it has been so nice out! We came back from our walk on Tuesday and I was starving. My mom saw this recipe on Fork Knife Swoon last week and really wanted to cook it. So together, we made this dish and it was absolutely delicious. There were no leftovers. I would make it again in a heartbeat.


You can head over there to read the recipe but I basically followed her recipe with a couple of edits.
  • Added Parmesan to the swiss chard kale mixture before we put the eggs in, as well as on top of the dish
  • Made 4 eggs in an 8 by 8 in baking pan
  • Peppered liberally before baking- adds a little more flavor to the dish
  • Cooked for 15 minutes until the eggs were fully done- I'm afraid of a really runny egg and mom likes hers fully cooked
  • Broiled the top for two minutes when the eggs were done to get it more crunchy.
