Recipe: Mango Salsa

This week, I have been enjoying mango salsa with all of my snacks. It's delicious on chips. cucumbers, and tilapia. Its basically this recipe but modified.

Onward to the recipe:

Ingredients:
4 ears of corn or a small bag of baby corn
One large or two smaller mangos
One and half onions
3 medium to large tomatos
2 Jalepenos or more, depending on how spicy you like your salsa
Cilantro- chopped into tiny tiny pieces
Lime for preservative

Instructions:
Cut everything raw into small pieces. They should be almost pencil eraser size pieces so that it's easy to scoop. Add the cilantro to the mixture. Squeeze some lime juice in the mix. Let everything marinate in a large bowl for 2 hours before trying to eat all that goodness. It gets better as you let it sit in the fridge. I usually eat all of it before the end of the week but it will smell a little funky when it goes bad.

UPDATE: I put this salsa on tilapia and baked it. It was so good. You can see below that it was super colorful and the fish was so moist due to the salsa.
