Basil Parmesan Mushroom and Spinach Penne

When I got home from a long day, I came home to my apartment full of girls yelling and giggling. In most cases, I would join right in but yesterday, I was on a mission to study about 2 hours more and eat something delicious. I got into my apartment, grabbed some ingredients and then got to cooking. It didn't take me more 25 minutes to whip this up and I was finished by the time I had to strain the pasta.


You'll Need:
Olive Oil
Garlic - about a teaspoon
A package of sliced white mushrooms - shopped roughly into pieces
A whole bag of spinach
Garlic Salt and Pepper
A Recipe Starter - In Basil Parmesan
3 Dorot Basil Cups
About an 1/8 cup of Parmesan Cheese (grated)
Penne Pasta - I like Whole Wheat

Instructions:
1. Saute the garlic and  mushrooms in a large sauce pan with a bit of olive oil on medium heat. Salt & pepper those bad boys. Also, put the water on for the pasta with a big pinch of salt.
2. Add a little more olive oil to the pan, add the spinach, and salt & pepper again. Keep stirring until almost wilted. The pasta water should be done, so add the pasta!
3. Add the Recipe Starter, basil cubes and cheese. Add a little more pepper, or salt to taste. Turn this down to low for the rest of the time, stirring when you see steam coming out (don't wanna burn it!)
4. Drain the pasta, toss it with olive oil and combine in bowls. Serve hot and store pasta/sauce separately.
Optional: Top with some mozzerella cheese :)
