White Bean, Spinach and Fusilli Soup



This soup was delicious, easy to make and uses very little ingredients. I had to make something for dinner but I had a really long day on Sunday of group meetings, homework help and cleaning to do. I put this in my baby crock pot at like 12:30 and came back around 5:30 and it was perfect. The only thing I would do differently is put half cooked pasta and not fully cooked. I will note that in the recipe. I imagine you can scale this up but it made about 2 servings for me. 

You'll Need:
1 can of condensed tomato soup
2 huge handfuls of spinach
1 can of white beans
1 cup of cooked fusilli pasta - use half cooked for more texture to the pasta
2 Dorot Cubes of Basil
Garlic Salt
Pepper
Oregano
Crushed Red Pepper Flake

Instructions:
1. Cook the pasta ahead of time. I keep pasta frozen in the freezer for slow cooker recipes.
2. Put the can of soup and a can of water or broth into the crockpot.
3. Add the pasta, the cubes, as much spice as you like and stir well.
4. Put the crockpot on high for 5 hours and stir occasionally.
5. Enjoy with toasted Italian bread, Parmesan cheese or fresh basil.
