Spanish Inspired Chickpea and Spinach Soup

My mother is always up for a good food experiment. She texted me that she found an interesting recipe to make for dinner sometime this week. We made Food and Wine's Chickpea and Spinach Stew. It was so good - like I could eat if for a week straight and still like it good! The raisins add a sweetness to the slightly spicy stew with chickpeas that melt in your mouth. I loved it with fresh toasted bread or spanish rice. The only edit we made was to add a little italian herb seasoning and possibly not enough fresh onion. We compensated with a little onion powder in the spice paste. Please try it out!
