Miso Soup



I really wanted to make something healthy but different for lunch. I always eat my leftovers from dinner and though tasty, sometimes they can be a little heavy for an afternoon meal. I whipped this together after reading several recipes online and I promise it is super simple. Maybe one of the simplest but most delicious things I've ever made. 

All you need:

Miso Ginger Broth (Trader Joe's)
Extra Firm Tofu - one package
Green Scallion
A large pinch of salt
A little garlic
Extras: I heard spinach, bok choy or mushrooms are good additions. 

Instructions:
1. Chop up the tofu into small chunks, evenly sized.
2. Chop up the scallions and any added veggies, also evenly sized. 
3. Add it all the the crockpot - this may not fill your crock pot if you have a larger one - I have a tiny one.
4. Simmer on low for 6 hours or high for 4 hours. You want the tofu to be tender and taste like the broth. That's when you can stop cooking it!.

SEE! Super simple and really tasty when it's cold outside.
