Slow Cooker Meals

Lately, I haven't felt any motivation to cook on the stove top. As it has gotten cold. I have a tendency to burrow in the covers after my workout. I pulled out my crockpot and have been making some seriously awesome meals overnight for lunch. I have a couple of recipes that I love to make and my coworkers tell me smell super delicious. 



Italian Crock Pot Soup

1 Green bell pepper chopped
2 zuchhini chopped
1/2 cup of barley
5 pieces of califlower, chopped up small
I can of tomato sauce
1/3 jar of vodka sauce
2 cups of water
oregano, parsley, salt, pepper, and garlic powder to taste

Layer the zucchini into the pot first, putting the starchier things towards the bottom.
Cook on low for 6 -8 hours.



Indian Crock Pot Soup

2 delicata squash, chopped small
1 package of Baby Bella Mushrooms
1/2 cup of TVP
2 tablespoons of a curry seasoning
1/2 jar of Tikka Masala Simmer Sauce (Target has my favorite - mild or medium)
3 cups of water
Salt, pepper and extra curry seasoning to taste

Layer the squash into the pot first, then TVP, then mushrooms.
Simmer in the crock pot on low wfor 6 -8 hours or until the squash is tender.




Mexican Crock Pot Soup

1 can of black beans drained
1 can of rotel, keep the liquid
1 can of corn
1 cup of rinsed quinoa
1 cup of water
3 tablespoons of your favorite salsa or hot sauce

Layer the quinoa in first, then top with the rest of the mix.
Cook on low for 6 - 8 hours, until the quinoa is cooked. Top with avocado!
