Pumpkin Bread with Cinnamon Chips

After a hectic Monday, all I wanted to do was bake in my apartment and deep condition my hair. I came home to a boy in the apartment, my one roommate coming home from a long weekend and some friends of my other roommate being loud. I went to my room, relaxed and said that Tuesday will be the day.

I got home around 8:30, grabbed my baking supplies and had this momma loaf and baby loaf in the oven by 8:50. It's fast and delicious, and the cinnamon chips really make it so delicious.


You'll Need:
1 Cup of vegetable oil or melted butter (I like oil for baked goods that will last more than a day or two, other wise I use half apple sauce, half oil or butter for my bad days)
1.25 cups of sugar (I used a unbleached white sugar)
1 egg
2/3 a can of Pumpkin
1.5 cups of flour
1.5 Tablespoons of Cinnamon
1 Tablespoon of Apple Pie Spice (You could use Pumpkin Pie Spice, but I didn't have any)
1/2 tablespoon of Baking Soda
1/2 Tablespoon of Baking Powder
1/2 a cup of Cinnamon Chips (I love the Hershey Ones)

Instructions:
0. Grease those pans and heat the oven to 350.
1. Cream the oil and the sugar with a spatula in a large bowl.
2. Add the egg and the pumpkin, mixing well.
3. Add the flour, spices and Baking Agents to the bowl, again mixing well.
4. Pour into greased pans (okay if you forget to grease them, just wait longer to take out of the pan)
5. Top with the cinnamon chips, making sure to press them into the top. They rise as you bake and they burn if you just toss them on.
6. Put into an oven at 350 for about an hour or until the knife comes out clean.
7. Enjoy with milk or a warm chai :]
