This weekend, I had a craving for pumpkin like no other. Whenever I go food shopping, I always grab a couple of pre made baking mixes for when company comes over or a surprise event happens. I grabbed this cornbread mix for a girl's night that didn't require dessert. Instead, I made them for breakfast on Sunday and it were delicious. I made both a muffin form and a little loaf pan for later. Both are equally as good. The only substitution I made was to put non fat vanilla greek yogurt in the batter rather than oil. It made it a lot healthier and I like the added protein. I always add a little extra cinnamon and vanilla to boxed mixes as well, but you do not have to do that. Please pick up a box and enjoy!
