Pinterest Adventures: Avocado Tuna Salad

Dear Lovelies! I love Pinterest with a burning passion. Every schoolwork break, driving break, or any break really is filled with me pinning on Pinterest. I pinned the recipe while at school, so I didn't get a chance to make it until now. This week for lunch, I have been nomming on some Avocado Tuna Salad. It's super simple to make and easy to pack for lunch. 

Ingredients:

One ripe Avocado
Salt and Pepper 
2 containers of Tuna- Canned (I think with the canned tuna that the salad has more tuna but the bagged tuna texture is better for some people)

Directions:

1. Drain the canned tuna, cut the avocado into two halves, and get a bowl. I make mine right in my lunch container for a quick grab and go lunch. 
2. Pour one can of tuna into the bowl, along with half the avocado. Salt and pepper liberally and mash with a fork until a smooth texture. It will all eventually meld into a tuna salad texture that is familiar to you. 
3. Add the second can of tuna and the other half of avocado. Salt and pepper liberally again.
4. Serve on a cracker, or my personal favorite, a cucumber slice.

Notes: Make sure your avocado is really ripe, like soft to the touch. It makes the salad creamier. Also, add some spices if you like heat/spice. The second time I made this recipe, I put a little crushed red pepper flake and some Spanish pepper seasoning into it and it was delicious. Don't be afraid to try something different. You can always add more avocado to tone it down. if you don't love it. 


Healthy Note: I love the switch from mayonnaise to avocado. It's a much healthier and tastier alternative. Avocados contain a lot of good oils for your body and improve hair health. Tuna has a lot of Omega 3s and is high in protein.
